THE MINNESOTA CONNECTION
From the field
to food-grade beans.
Minnesota offers a documented connection between soybean growers and the foods made from their crop.
University of Minnesota Extension’s 2022 “From field to tofu” article describes food-grade soybean growers, processors and buyers. It is a local example of the supply chain behind the campaign. The 2025 USDA figures below describe the entire state soybean crop; they are not a measure of beans grown for tofu.

The crop grows.
The tofu is made.
A soybean becomes tofu through a food-making process: soaking, grinding, heating, filtering and coagulating soybean milk.
Soybeans serve many markets. Food-grade varieties and supply chains connect suitable beans to tofu makers. State crop totals do not tell us how much becomes tofu, and this campaign does not establish the origin of any particular product.
